Guji Gr. 2 coffee, sourced from various smallholder farmers in Ethiopia’s Guji region, represents a commitment to traditional farming practices and exceptional quality. Grown at altitudes ranging from 1,800 to 2,000 meters above sea level, this coffee features JARC varieties and local landraces processed using the fully washed method. Harvested from October to January, depending on elevation, each farm, typically less than 5 hectares, practices intercropping and organic farming by default.
At the washing station, meticulous care is taken in processing: cherries are hand-harvested, sorted, pulped, fermented, washed, and meticulously graded. The coffee is then dried on raised beds under shade, ensuring even drying and preserving flavor complexity. This dedication results in a cup profile noted for its floral aromatics, citrus (lemon) brightness, berry flavors, and a satisfying sweetness. Ethiopian coffee’s rich diversity and traditional methods continue to define its exceptional quality and appeal in the specialty coffee market.
